Food offers powerful therapeutic benefits for health. All foods fit, and I’m here to support you in nurturing your body, enjoying food, supporting your health, and leaving the stress behind.”

Hi there! I’m Erica (she/her), a dietitian with a knack for tackling eating disorders, pediatric nutrition, pregnancy and postpartum, body image, and chronic disease management. My passion? Empowering people with giving them the tools to make peace with food and install intuitive eating principles with whole foods—because health should be about balance, not battles.

In real life, my dry sense of humor shines through. I’m a mom, wife, nutrition nerd, and nature enthusiast who loves exploring the PNW. I adore my kids 92% of the time (I did the math) and have a thing for foods that start with "C"—coffee, cupcakes, carrots, you name it.

I find joy in outdoor adventures, feeding my family, gathering with friends, and squeezing in sunny day runs. I’m also big on advocating for better food access and food equity.

After years of chasing diets and trying to make my body the center of my health, I finally learned to respect it and build a guilt-free relationship with food. Now, I live by the mantra that food is medicine—for both body and mind.

INTEGRATIVE & FUNCTIONAL MEDICINE

I take the time to understand your whole health—not because I’m nosy, but because true relief and holistic nourishment come from looking at every aspect of your life: social, genetic, mental, and beyond. A functional and integrative approach encourages us to assess the whole person, not just isolated symptoms. This comprehensive view helps me identify barriers to your long-term goals, contributors to disease states, and guides the creation of a unique care plan tailored to you. This patient-centered approach recognizes that mind, body, and spirit are all interconnected.

Commitment to Equity and Justice

As a person of color, I am acutely aware of the oppressions and injustices that our healthcare system perpetuates, particularly in how they affect overall health—whether through access, quality of care, or lack of personalized attention. Healthcare is not just a human right; it must also be delivered with compassion, respect, and a commitment to equity.

At Summit Nutrition Counseling, we welcome and support people of all races, ethnicities, creeds, sexes, sexualities, gender identities, ages, body sizes, and physical or mental abilities. Your experience matters, and I’m here to ensure your care is as inclusive and respectful as it is effective.

We welcome people of any race, ethnicity, creed, sex, sexuality, gender identity, age, body size, or physical or mental ability.
